1: do NOT freak out

2: do NOT pour water on a grease fire or it will explode MUCH further than you think, like up to the ceiling, seriously, do not pour water on it

3: select a fireproof item, a cookie sheet or lid or similar

4: slide item over fire to keep air out, as shown above

5: leave alone

6: slowly lift to check for fire

7: no more fire, yay

If the fire is still there, or spreads out of the coverable container, you need a fire extinguisher. If you can trap the fire inside a pan or other container, you can probably just pop a lid on it and turn it off. Fire extinguishers are really messy, but they are MUCH less messy than a spreading fire. Use them if needed.
